Huevos Rancheros Tacos

Yield: 4 Servings

The traditional Mexican breakfast—inside a taco. Because all great things deserve to be inside a taco.

Preheat broiler to low and place oven rack in the middle position.

On a baking sheet, arrange tortillas and coat with cooking spray. Broil 2 minutes; remove pan from oven and flip tortillas over.

Divide black beans among all 8 tortillas and sprinkle with cheese. Place tray back in the oven and broil for 1 to 2 minutes until cheese is melted. Remove from oven and bring tray next to range.

Heat a large non-stick pan over medium high heat and spray or add oil. Crack two eggs and cook until the whites are cooked through, then flip. Transfer egg over black beans and cook remaining eggs. Sprinkle all the eggs with pepper and salt, if desired.

Top tacos with Pico de Gallo, sour cream, avocado, and cilantro. Serve with lime wedges.

In a large bowl, combine diced tomatoes, onion, jalapeño, cilantro, and garlic. Add lime juice and salt, stir to combine.

Store in an airtight container and refrigerate up to 5 days.
